The grinds of my Medium roast had hints of honey, brown sugar, and sweet tea, while Medium-dark developed more of a semi-sweet chocolate tone, accented by dried raisin and date. The aroma brought out a clean scent of warm honey and brown sugar cookies, with a hint of orange spice tea. The cup has a fragrant overlay in light roasts, drawn out by bright lemon-like acidity, and very nice underlying sweetness. Medium roasts are lively and aromatic, with aspects of fresh herbs like rue, and lemon basil, and light floral hint. We think the Medium expression is the best for this varietal.
