Description: Light roasts were impressive, with sweet highlights through the finish, and fruited characteristics that draw out a moderate level of acidity. You get a nice preview when grinding the coffee, with notes of dried date and berry, and emphatic sweet notes of brown sugar with cinnamon. Pouring hot water on the grinds draws out milk chocolate and coconut, with hints of praline, and dried berry. The level of sweetness in Silvestre's coffee stood out on a table of Guatemalan offers, layered with profiles of brown sugar, toffee, caramelized burnt sugar, and milk chocolate. The acidic impression is bolstered by hints of blackberry and golden raisin, along with a hint of yellow cherry. This coffee has an exceptionally sweet finish too, with notes of molasses, nougat, and vanilla caramel trailing off in the long aftertaste.
